These are seriously the BEST THINGS since sliced, whole grain bread. Seeds of Change makes several kinds of certified Organic microwaveable pouches. These little babies are a staple in our kitchen. They go with just about everything and the kids love them! 90-seconds in the microwave and VOILA! You’re done.

Magnificent Man-Chili

You’ll need: 1lb ground beef, 1 can black beans {15.5oz}, 1 can dark red kidney beans {15.5oz}, 1 can light red kidney beans {15.5oz}, 1 can pinto beans {15.5oz}, 1/4 diced red onion, 1/4 diced orange pepper, 2 diced celery stalks, 1c V8, 3tbs worcestershire sauce, 1tbs red pepper flakes

Beans added to browned ground beef.

~ Brown the ground beef. Once browned, transfer to a pot.

~ To the ground beef add the cans of beans, orange pepper, celery, V8, worcestershire sauce and red pepper flakes. Cover and cook on medium heat for one hour, stirring occasionally.

~ Serving suggestion: our family’s favorite way to eat freshly made chili is over a bowl of pasta and topped with shredded cheddar cheese. Delish!

7-Layer Cookies from Heaven

You’ll need: a stick of butter, 1 package of graham crackers, 1 12oz. package of chocolate chips, 1 12oz. package of butterscotch chips, 1 14oz. can of sweetened condensed milk, coconut and chopped nuts {pecans, peanuts or walnuts…any will work.}

~ In a large plastic zippered bag, crush the package of graham crackers into tiny pieces. Personally, I like to use a roller.

~ Melt the stick of butter and pour over the crushed graham crackers in a 9 x 13in. baking dish.

~ With a spatula, mix the butter into the graham crackers so that they are all coated. Flatten the mixture and spread to cover the bottom of the dish. Bake at 350 for 10 minutes until golden brown.

~ Let the crust cool for a few moments and then sprinkle the chocolate chips over the crust.

~ Sprinkle the butterscotch chips over the chocolate chips.

~ Add enough coconut over the chips to lightly coat them.

~ Sprinkle the chopped nuts over the coconut.

~ Finish by drizzling the coconut with the sweetened condensed milk.

~ Bake for 30 minutes at 350. Once baking is complete, let the cookies thoroughly cool before attempting to cut. Enjoy!

Purple Pickled Eggs

You’ll need: 6 hard boiled eggs, 1c cider vinegar, 1 can beets with juice {approx. 1c}, 1/3c sugar, 1/2 tsp. salt, 1tbs. minced onion, dash of bay leaves

~ Combine all ingredient EXCEPT eggs in a large bowl.

~ Add eggs carefully to bowl; the beet juice stains.

~ Cover and refrigerate for at least 36 hours prior to serving.

TIP: If you’re like me and you’re not a super big fan of beets, try putting one or two on top of a salad with some balsamic dressing. So. Yum!

Mediterranean Shrimp and Feta

Mediterranean Shrimp and Feta

You’ll need: 2lbs of shrimp, EVOO, garlic, dill, black olives, feta and marinara {I use my from-scratch marinara.}

Prep Time: 10-15 minutes

~ Coat the bottom of a baking dish with the EVOO. Add to it a dash of dill and 2-3 medium cloves of garlic.

~ Add the shrimp to the baking dish and mix around in the EVOO and dill until the shrimps are coated. While you can leave the tails on, I prefer to remove the tails before baking. The best way to remove tails from shrimp is to squeeze and pull the base of the tail from the meat.

~ Ladle enough marinara over the shrimp to thoroughly coat them.

~ Sprinkle sliced black olives and feta crumbles over the pan from end to end.

~ Bake at 425 for 20 minutes; serve over pasta and amaze your family!

The Best Alfredo in the World

The Best Alfredo in the World!*
…and it’s super easy to make, too 😉

You’ll need: 1/2 cup butter, 2 cups heavy cream, 3 large garlic cloves, 1 1/2 cups freshly grated Parmesan cheese and 1/4 cup chopped fresh parsley

Prep Time: 10 minutes

~ Melt the butter in a medium saucepan over low to medium heat.

~ Add the cream, garlic and cheese and whisk quickly until the butter and cheese has been melted. Be careful not to get the sauce too hot because it can burn in the bottom of the saucepan.

~ Stir in parsley and serve. {The picture at the top shows the finished sauce served with chicken and linguine.}

*Normally I’m not a big fan of alfredo sauces. I think they are thick and disgusting. THIS SAUCE, on the other hand, is wonderful! It’s thin and flavorful. I’m a fan! This is the only alfredo sauce I’ll ever eat again.

YOU WILL NEED:
Water
Corn Syrup
Food Coloring
Powdered Hot Chocolate Mix
A Big Ass Bucket

“In a big ass bucket, combine three parts corn syrup to one part water. Stir that shit. Then add some red food coloring to make it, you know, red. Don’t be heavy handed while doing this because less is more. When you’ve achieved your desired shade, add just a couple drops of red and blue to darken it, making it more realistic. THEN, add some hot cocoa powder. The hot cocoa is going to thicken up the mixture, making it look more real, and it’s also going to make it more opaque and just a little bit darker. Oh, it’s edible, too, so that’s gross.”

Honey-Baked Turkey with Pears*

You’ll need: turkey breasts or cutlets, honey, sliced pears

Prep time: 5 minutes

~ Lay the turkey pieces in a baking dish; the pieces can be touching but do not overlap them.

~ Arrange sliced pears on top of the turkey and drizzle with honey.

~ Bake at 350 for 22 minutes.

*YUM YUM YUM! The honey and the pears will give the turkey a slightly sweet flavor that can’t be beat! To make the potatoes in the above image check out the recipe here.

AbFab New Potatoes

AbFab New Potatoes*

You’ll need: new potatoes {baby red-skinned potatoes}, EVOO, a leek, two green onions, thyme and dill

Prep time: 10 minutes

~ Thinly slice the potatoes and put into a medium sized baking dish.

~ Lightly drizzle the potatoes with the EVOO and then sprinkle the dill, thyme, diced leeks and green onions over the potatoes. Stir around to coat all of the potatoes.

~ Bake at 350 for 40 minutes.

*NOT ONLY are these AbFab potatoes absolutely fabulous, they aren’t too shabby for you, either! By seasoning with herbs and vegetables you get a great taste with no butter or salt. And yes, your children will gobble them up 🙂

Stuck in a Rut

As mouthwateringly fabulous as the above Parmesan shrimp and quinoa was, we have it every other week. As amazing as it is, I feel like I’m stuck in a rut. Six months ago we didn’t have the same dinner twice a quarter. Now, I’m repeating every other week. As I scour Pinterest for new recipes, please feel free to send me some of your faves!
